Healthy recipe with cauliflower
Cauliflower is incredibly versatile because it takes on the flavor of whatever you season it with. One of the healthiest (and tastiest) ways to prepare it is a Turmeric & Lemon Roasted Cauliflower Bowl.
This recipe is packed with anti-inflammatory spices and healthy fats,
making it a perfect light lunch or side dish.
Turmeric & Lemon Roasted
Cauliflower
Prep time: 10 mins | Cook time: 25 mins | Serves: 2-3
Ingredients
- 1 large head of cauliflower, cut into bite-sized florets
- 2 tbsp extra virgin olive oil
- 1 tsp ground turmeric (great for anti-inflammation)
- 1/2 tsp cumin
- 1/4 tsp garlic powder
- Salt & black pepper to taste
- Fresh parsley for garnish
- Lemon wedges for serving
Instructions
- Preheat & Prep: Preheat your oven to 200°C
(400°F). Line a large baking sheet with parchment paper.
- Season: In a large bowl, toss the
cauliflower florets with olive oil, turmeric, cumin, garlic powder, salt,
and pepper. Ensure every piece is evenly coated in that golden turmeric
color.
- Roast: Spread the cauliflower in a
single layer on the baking sheet. Roast for 20–25 minutes, tossing
halfway through, until the edges are crispy and charred and the centers
are tender.
- Finish: Squeeze fresh lemon juice over
the hot cauliflower immediately after taking it out of the oven. This
"wakes up" the earthy flavors.
- Serve: Garnish with chopped parsley.
💡 Make it a Full Meal
If you want to turn this into a complete "Power Bowl," try
adding these:
- Protein: Add a can of rinsed chickpeas to
the baking sheet to roast with the cauliflower.
- Healthy Fat: Drizzle with a quick Tahini
Sauce (tahini, lemon juice, garlic, and a splash of water).
- Grains: Serve over a bed of quinoa or
baby spinach.
Nutritional Benefits
- Cauliflower: High in fiber and B-vitamins.
- Turmeric: Contains curcumin, which is
better absorbed when paired with the black pepper in this recipe.
- Olive Oil: Provides heart-healthy
monounsaturated fats.
